I used to feel the same way, especially since the woman who introduced me to my husband of 37 years is a gourmet and when we invited her to dinner my meal was a disaster... I prepared a jello kind of pie that didn't set up and
I cooked Green Giant veggies in a frozen pouch — when I served them they had little chunks of ice in them... my husband comforted and encouraged me to continue to try and while I'll never be a gourmet I love to cook and entertain!

As for the salad base, I used gluten free orzo for the photos, but this works equally well with
cooked, cooled quinoa (for more nutrients) or a
giant bed of leafy
greens (which makes it a perfect paleo & Whole30 approved meal).
Using up
cooking greens is never an issue for me (using up five
giant bags of lettuce that I got this week is daunting, on the other hand).
When almost done, throw in a few
giant handfuls of arugula and some chopped
green onions and
cook for just 3 - 4 more minutes until the
greens begin wilting.
Like all good leafy
greens, the
giant pile of escarole leaves will wilt down dramatically as they
cook.
