I used 1/2 cup
cooked quinoa (1 day old so it was a little dried out) and 1/2 cup
rice «
bread» crumbs.
Working in batches, add a couple of
rice balls to the hot oil at a time and
cook until the
bread crumbs are brown and the
rice balls are completely heated through.
Unlike many cauliflower crust or
bread recipes, you don't need to
cook the
riced cauli before forming the patties.
-- 1 can mixed beans (I used Scarpone's which was composed of a melange of red kidney beans, white beans, black eyed peas and chickpeas but any variety or varieties you like will work)-- 1/4 cup uncooked wild
rice,
cooked in veg stock until tender — 2 large stuffer mushrooms — 1/2 to 1 cup panko
bread crumbs (I know this is quite the range but it really depends on the moisture content of your burgers — they won't hold together if they are too soupy)-- salt and pepper, to taste (I indulged in a healthy amount of truffle salt)
Serve soup hot with
bread on the side or
cooked rice, millet, or quinoa on top.

Other odds and ends — all in very small amounts of 2 to 4 tablespoons — in addition to the refried beans, Mexican

bread included a more risotto - like
rice, caramelized onions (sort of fajita style), bronzed carrots (slices of carrot roasted with blackening seasoning and brown sugar), green beans
cooked with tomatoes and onion, very thick pureed white bean soup, about 5 sweet potato fries, a couple of artichoke hearts, a dab of roasted red peppers, and half of a veggie burger made with black beans and corn.
It is mostly
rice, but if I feel like having some naan
bread with the curry, then it's almost sure I will put some potatoes or sweet potatoes in the curry, I just love to eat potato stews / curries with
bread, reminiscences from my childhood and my grandmother's Romanian
cooking where we would eat white
bread with anything, potatoes included.
We have two main faves in our house — this amazing steamed broccoli and cauliflower gratin with a mushroom - chives roux sauce that i could eat until the cows come home (we grind garlic salt on top of the
bread crumbs and it's seriously heaven), and a red -
rice beetroot risotto where you stir in crumbled feta while still
cooking the
rice so that it melts in and goes all creamy and thick!
Since I was craving some carbs, and it was a little too late to whip up a batch of
bread... and I wasn't patient enough to wait for brown
rice to
cook, I decided pasta was the way to go.
It turns out that the cauliflower
rice completely
cooked in the dough which resulted in a light and moist
bread that you would never guess contained cauliflower.
So traditionally a nut roast contains either breadcrumbs or
rice (sometimes even both) and I could well have
cooked up a good loaf of Paleo Granary
Bread just for this dish but I opted for some coconut flour instead as it helps to retain moisture, and has that sweet,
bread - like taste.

I continued to make the
