For a lighter and more streamlined versionor if you have
no cooked rice on handyou can replace the rice with chunks of avocado.

I like to
cook the rice on its own and add it to the soup one bowl at a time.
Stir once and boil for 5 minutes, then cover the pan with its lid and continue
cooking the rice on the lowest possible heat for 15 minutes.
If you cook the cauliflower (like it says in the cauli - rice link), you can still use it for the crust if you squeeze the excess water out just like I did here: Amazing flour - free Pizza (using Cauli - rice) I think that
cooking the rice on pan (drying out) results in better taste and texture but you can use either technique

On some level you have to remember that you're just a flesh and blood human, the rules do apply to you, and you can't
cook rice in 10 minutes.

on a deep purple hue when
cooked, and makes for a dramatic and more nutritious stir - fry.

Spaghetti squash doesn't quite taste like
rice, so the flavor was slightly different than a traditional Mexican - style
rice bowl, but the squash is very mild and mostly takes
on the flavor of whatever you are
cooking it with, so it was still delicious.
I often buy the TJ's
cooked lentils — they're so easy to mix with brown
rice & some sautéed veggies when I'm short
