I like to make this Slow
Cooker Hawaiian Shredded
Chicken recipe in the
warmer months and then serve it in a lettuce or chard wrap with whatever veggies are in - season.
We're in the midst of a very cold stretch of weather in Nashville, so I decided to make her belly -
warming Slow -
Cooker Chicken Chili and am so glad I did — it turned out amazing!
Reduce heat to simmer, add
chicken meatballs and
cook for 5 minutes more or until meatballs are
warmed through.
Return
chicken to slow
cooker, stir to mix all ingredients, and set temperature to
warm (or low) until ready to serve.
Once the
chicken is shredded, return to the slow
cooker and place on
warm or low until ready to serve.
Here are some of my favorite additions: toasted pine nuts, capers, olives, a handful of
cooked quinoa, sliced baked tofu (from a package is fine), sliced
warm Chickpea Cutlets (or any
chicken - y thing), garlicky sourdough croutons, vegan bacon, (deep breath... ok, proceed), tempeh (Chimichurri or Garlicky Thyme), grilled seitan, grilled asparagus, grilled portobello, roasted squash.
Put the
chicken pieces on a clean baking sheet and place in the
warm oven while you
cook the second batch.
Turn the slow
cooker to
warm and stir in the
chicken.
Prepare
warm ingredients:
Cook bacon in a large skillet over medium until fully
cooked and crispy, boil the eggs for about 10 min, cool, and peel off sheel, marinate the
chicken in a casserole dish with BBQ sauce and bake @ 400 for about 40 min.
In a medium sauce pan add the sauce ingredients; cream of
chicken, milk and salsa and
cook until
warm.
Stir kale into sauce and
cook, uncovered, until
chicken is
warmed through, about 5 minutes more.
Directions: Bring a pot of salted water to a boil, add the lentils, reduce heat and
cook until tender, 15 — 30 minutes — check lentils periodically / When done, drain and set aside / Sauté garlic, celery, carrots and onion in olive oil for several minutes, until translucent / Stir in lentils,
chicken broth and chopped herbs / Bring to a boil, add butter, stir, adjust seasoning / Set aside and keep
warm if serving immediately / If lentils are to be refrigerated for a day or two, hold the herbs and butter, and stir them in when ready to reheat and serve.
While
chicken is
cooking,
warm honey so it's easier to stir.
Then I added the frozen veggies and
chicken and
cooked just a bit more on saute mode to
warm it back up.

cooked and cut into bite - sized pieces.

Pour the
