Make chocolate bark: Pour leftover chocolate into a shallow puddle on parchment or wax paper and sprinkle with chopped nuts, dried fruits, crushed candies,
crumbled cookie chunks, a pinch of sea salt flakes, etc..
It certainly took a few tries to get the right texture, peppermint flavor, and
cookie chunk ratio, but finally, SUCCESS!
resting at the bottom of the cupcake, there are
big cookie chunks studded throughout the cakes, and there is a dusting of chocolate cookie crumbs on the top.
After you do pulse all of the cookies until you have course crumbs with
some cookie chunks in them, you'll add brown sugar and melted butter and mix together.
Add in
the cookie chunks.
I use the Enjoy Life brand as they are dairy / soy / nut / allergen free — either mini chips or chunks — and even chop the chunks up a bit so they are more manageable in the cookies
1 1/2 cups (100gms)
cookie chunks — about 1 - inch chunks (graham wafers, digestive biscuits, or other crisp cookies, gluten - free if necessary.
Drizzle slowly over the dough and
cookie chunks.
