Once the big
cookie comes out of the oven, be sure to let it cool completely.
As soon as a tray of
cookies comes out of the oven, even before the cookies begin to set completely, I always take one and eat it super-hot, when all the chocolate melts in my mouth.
It's literally fried chicken, fried fish, or fried venison the night before (something is bound to be fried), always fresh baked
cookies coming out of the oven, and big breakfasts every morning!

out of said skillet as soon as it
comes out of the

cookies are very fragile, but will firm up quickly.
Place the pan on a

For slightly flatter, chewier
cookies, press down on each
of the
cookies with a fork right when they

The excitement
of vegan baking is putting all these things that you don't think should go on a
cookie sheet or in a cake pan, popping it in the
oven, and crossing your fingers that it
comes out somewhat resembling a baked good.
If you want ooey, gooey chocolate on top, press a few chips on top
of the
cookies right when they
come out of the
oven.
I set a bittersweet chocolate chip on top
of each
cookie right when they
came out of the
oven and it melted down just a tad; beautiful and delicious!
I had to make another indentation into the
cookies after they
came out of the
oven, because they flattened
out too much.
The
cookies will appear puffy when they first
come out of the
oven, but once transferred to the counter to cool they will set and the thumbprint will sink down like normal.
Let the
cookies cool on the baking sheets for 3 minutes before disturbing; they're very fragile when they first

of coarse sea salt (I like Celtic Sea Salt) on top

cookies, I find these
cookies are best served once fully cooled, the texture and flavors need time to set after

Yeah, the
cookies are quite sweet just when they
come out of the
oven.
Scoop the batter into the prepared liners, I use 2 scoops
of a medium
cookie scoop so 3 tablespoons go in there, then top each muffin with about a tablespoon
of streusel and bake in the preheated
oven for 20 - 25 minutes, until a toothpick inserted
comes out clean.
These
cookies just
came out of the
oven at our house.
It was helpful for me to let the
cookies sit on the sheet a few minutes after they
came out of the
oven so that the chips could re-harden after melting a bit while in the
oven.
The
cookies have a nice depth
of flavor and the texture
of the cooled
cookies is the same as
cookies that just
came out of the
oven - meaning they break apart easily.

The worst thing about these
cookies is that you have to wait for about 30 minutes for them to set after
coming out of the
oven.
Line a
cookie tray,
oven pan or mold with some baking parchment; I've used a thin plastic tray that
came out of a pack
of cookies for the cranberry and nut one.
They're a bit soft when they first
come out of the
oven, so give them a few minutes to cool on the
cookie sheet before moving them to a wire rack to cool.
