When you're ready to make the
cookies, just take the
dough out of the fridge, let it sit for a few minutes, and then bake as usual.
Scoop the
cookies out onto the baking sheets (I use a 2 - inch
cookie scoop, which is about 1 1/2 tablespoons
of dough).
After chilling, lay
out a sheet
of plastic wrap and spread one
of your
cookie doughs evenly

cookie dough (or our house favorite, Oatmeal Raisin with Chocolate Chunks) from the freezer, and bake them as needed.
Remove first section
of dough from the refrigerator and cut
out cookies with any shape cutter you like.
Something I've found that helps prevent tearing
of the
dough (and leaking)-- I roll it
out and assemble the tart on the parchment paper that it's going to be baked on — that way when I'm done, I can just pick the whole sheet up and plop it on a

I have seen many raw cheesecakes in my life and have never made one so why not go all
out and add mini balls
of cookie dough?

cookies really quickly.
You can use your favorite chocolate chip
cookie recipe, leave
out the baking soda and add milk to bring the
dough together in place
of eggs.
I'm the kind
of person that eats all the chocolate chip
cookie dough chunks
out of the ice cream.
Scoop the
dough out with a medium sized
cookie scoop onto the prepared baking sheets, leaving a couple
of inches between the
cookies, I managed to fit 8 on a half sheet pan.
