Greetings; yes, tallow is a great
cooking fat, as long as it's sourced from well raised animals.
Ghee also called clarified butter is a traditional
cooking fat from India and a wonderful option for those with dairy allergies as all the milk proteins have been removed leaving only the nonallergenic butter oil.
Lard is a great
cooking fat and can be a wonderful way to increase the amount of good fat you're consuming.

The reason I suspect that liquid coconut oil is marketed as better than coconut oil as
a cooking fat is because it stays liquid even when refrigerated.
