cooked rice) 1/2 cup (4 ounces) vegan cream cheese 1 1/2 cups shredded vegan cheddar or cheddar - jack blend 1 package taco seasoning or 1 tablespoon ground cumin, 2 teaspoons smoked paprika or chili powder, and 1 teaspoon dried oregano 2 cups roasted butternut squash chunks (spray 1 - inch chunks with non-stick spray and roast
at 450 degrees for 10 minutes on each side) 1 can black beans, rinsed and drained 1 - 15.5 ounce can corn, drained 1/2-15.5 ounce can pureed
pumpkin
Bake for 30 to 50 minutes
at 400F (
cooking time will vary depending on the size of your
pumpkin), or until the flesh is really soft.

cooked pumpkin (cut in half, scoop out seeds, place cut side down on baking sheet and bake
at 350 until soft.

at once, and then freeze them in 2 cup portions for later.

Also like
pumpkin, sweet potato can be found pre-pureed in cans (I have found it
at Whole Foods and the local co-op), so you have a convenient shortcut that makes peeling,
cooking and mashing potatoes a non-issue.
I then doubled the
pumpkin pie recipe above and
cooked it for 1 hour
at 350 degrees.
If you are inclined, it's super easy to whole roast a pie
pumpkin or red kuri squash by
cooking it for an hour or so in an oven
at 350 degrees.
As it
cooks over the hot, direct heat the water bubbles up inside the flesh of the
pumpkin, evaporating from the surface as it
cooks and intensifying its flavor, while making it tender
at the same time.
