The only things I did differently were
cooking the millet with veggie stock and to replace the apricots with chopped medjool dates and the cilantro with parsley (only bc that's all I had on hand).

One tip for
cooking with millet is that you can maximize its naturally sweet and rich flavor by coarsely grinding it in a clean coffee grinder.
I frequently experiment
with granola, and on my last try added quinoa,
millet, and barley, which I
cooked in boiling water before I added it to the oat - nut mix for baking.
You can make it
with any kind of leftover
cooked grain - be it
millet, quinoa, wild rice, maybe even oats (let me know on that one).
I have enjoyed the muhammara as a snack
with carrots and crackers and used it as a paste to flavor leftover
