As usual, we got our «turkey» from our local
Veggie Heaven restaurant, and I
cooked a few
side dishes to go along with it.
These Parmesan Roasted Green Beans are an easy
veggie side dish and only require 5 ingredients and just 20 minutes to make!Do you ever really want a home -
cooked meal, but don't want to hassle...
Serve this rich and satisfying chicken supper over hot,
cooked pasta, polenta, or mashed potatoes with a fresh
veggie side to round out the plate!
I've got a huge wok - like pan with high
sides, and as I
cook each
veggie, I dump them into a large bowl on the
side.
Usually when I
cook veggie burgers, I gently press them down with a spatula, then I draw the
sides in to bring it back up in height and give it a round shape.
Spaghetti Squash — spaghetti squash is a great
side dish, or even a meal, but they take a long time to
cook so most people give up on this
veggie.
You can either
cook the
veggie burgers in a skillet with a little refined coconut oil until crisp on both
sides (on medium heat for about 5 minutes per
side), or bake in a 350F oven for 40 minutes, flipping the patties half - way through the
cooking time (this is the method I chose).
Slide
veggie mixture to one
side of the wok and add in the beaten eggs, scrambling until
cooked through and then incorporate with the veggies.
