These Paleo Tostones (twice - fried plantains) are
cooked in coconut
oil and served
with a Whole30 friendly
Avocado Ranch Dip that no one will guess is Paleo!
I then topped my
cooked red lentil pasta
with some plain tuna, the other half of my
avocado from this morning, minced garlic, and a drizzle of olive
oil.
Replace the canola
oil with a
cooking oil of your choice, such as
avocado.
Cook and season your protein and veggies
with healthy primal fats, such as ghee, coconut
oil,
avocado oil, extra virgin olive
oil, or animal fat from well - raised animals.
Ideas include peanut butter and jam; tinned mackerel in tomato sauce; good old baked beans; tuna mixed
with quality mayonnaise and chopped spring onions or gherkin; grilled or sautéed mushrooms
with some herbs; hummous and chopped tomatoes; 1/2 an
avocado mashed
with some olive
oil and lemon juice;
cooked prawns, chopped or blended
with some sweet chilli sauce and good quality mayonnaise or low - fat soft cheese.
The hands - down easiest dish that I (David) know (and make when I'm alone
with the kids and have max 10 minutes to prepare dinner) is to
cook a package of fresh gnocchi, mix a store - bought pesto
with mashed
avocado, add a little extra lemon and olive
oil and just stir everything together
with some canned chickpeas and cherry tomatoes on top.

One of my favorite ways to eat
cooked spaghetti squash is tossed

You can't
cook with Olive
oil in high temperatures, but
Avocado oil is okay to use in high temperatures.

avocado oil has some very favorable qualities: high mono - unsaturated fat content, and the highest smoke point of any of the common oils — which means you can
cook with it, without worrying about it breaking down in the heat, and it has lots of chorophyll in it — hence the green color
I rarely
cook with oils but I do on occasion... the thing that bothers me about
avocado oil is the high levels of omega - 6... so if anyone knows a lot about omega - 3 to omega - 6 ratios and
cooking oils wants to weigh in on what they think is best, please do share!
