cooled, make the cream cheese
filling and layer the cakes with the
filling in the
middle.
Bake
in the preheated 375 ˚F oven for 40 - 60 minutes, until the pastry is golden brown and the juices
in the
middle are bubbling — this is important because otherwise the cornstarch
in the
filling will not be cooked and it will be runny when it
cools.
Pour
filling into pie crust and bake
in the bottom of the oven until just set and wiggles just a little
in the
middle (it will set completely once it has
cooled) about 30 - 40 minutes.
Put the
cool filling onto the pastry so it covers the
middle third of the pastry, leaving a 6 cm (2 1/4
in) gap at the top and bottom.
If it is hot
in the kitchen, you can
cool it quicker by
filling a clear glass with ice and setting it
in the
middle of the bowl.
