Once the
gelatin mixture has
cooled, Place 1 tablespoon of the whipping cream and the cream of tartar in a small ziploc bag.
When the liquid
mixture has
cooled for about 5 minutes, add the
gelatin and stir until well combined.
Continue whisking until the
mixture has
cooled slightly, about 1 minute, and add the
gelatin and water
mixture and the vanilla.
Meanwhile sprinkle
gelatin on remaining 1 cup
cool stock; let stand 1 minute, add to strained stock
mixture; then heat, stirring until

Once you mix it with the cold
