No tricks up my sleeve this time, just easy, paired down, classic
corn muffin perfection.
Or use a gluten free
corn muffin mix (Aldi carries a great one).
The day before serving, heat oven to 400 degrees, and mix the two packages of
corn muffin mix, two eggs, and 2/3 cup of milk in a medium sized bowl, before pouring into a greased 9 X 13 pan.

I think it's good to have several

Made chili last week accompanied by Bobs Red Mill
corn muffin mix and must say was disappointed by the lack of sweetness.
The finished cornbread tastes like a cross between a not - too - sweet
corn muffin and cornbread stuffing in flavor and has a finer crumb than normal cornbread.
After nothing but
corn muffin failure, I found a recipe that works, is easy to make, tastes great, and doesn't require butter to make it special.
If I don't have
the corn muffin mix, I can easily whip some up.
Top with
corn muffin mixture.
