lunch, an after school snack for hungry teenagers, or a quick dinner (just add a

Lunch: Honey Mustard Chicken
Salad: vegetable base (3 large handfuls mixed greens, 1/2 cup chopped bell pepper, 1/2 cup chopped cucumber, 1/2 cup shredded carrot, 6 - 8 cherry tomatoes = 50 calories) + 1 ounce crumbled feta cheese (1/4 cup = 70 calories) + 3 ounces marinated and grilled chicken (90 for chicken alone + 30 for marinade = 120) + 2 tablespoons Ken's Light Honey Mustard Dressing (80) + 1/2 ear of
corn, kernels shaved off (50) = 370
For
lunch I made a veggie pasta
salad with ditalini pasta, black beans, green pepper, red pepper,
corn, celery and hemp hearts along with a homemade cumin dressing.

For
lunch I had a big glass of water and a huge
salad made with mixed power greens, a half of a can of chickpeas, one tomato, a cup of shredded «
corned beef» made from seitan (I bought it at The Chicago Diner), and balsamic vinegar, salt, and pepper.
As an aside, I started to look at the waste generated during
lunch — everything from entire untouched sandwiches and
salads, to pizza,
corn dogs, chips, milk, and yes, untouched apples and oranges.
When I started writing The
Lunch Tray in 2010, an actual week's menu in Houston ISD included breaded chicken sandwiches, cheeseburgers, chicken fried steak fingers with cream gravy, beef taco nachos, beef taco
salad, pepperoni pizza and Frito Pie (fried
corn chips topped with chili and cheese).
The
lunch menu, which is posted on the district's Web site, includes cheeseburgers,
corn dogs, sloppy joes, chicken nuggets, pizza and taco
salads.
