Roasted Garlic & Carrot Hummus, makes about 4 cups -1 bunch carrots -1 head garlic - about 1/2 cup olive oil -1 can chickpeas -2 T tahini -1 T cumin -1
T corriander - juice of one lemon - salt & pepper
1 teaspoon of fresh
grain corriander 1 clove of garlic 1/2 teaspoons of fine grain salt 1/2 cup of rice flour water
Add turmeric, cinnamon, ground
corriander black pepper, ginger, saffron, and tomato paste.
Small twist on this - was very nice 750g carrots, peeled and grated 410g can chickpeas, drained and rinsed 1 medium onion, chopped 4 cloves of garlic Garam Masala Tumeric 1 egg olive oil (in fried carrots) 100g breadcrumbs from pain au lait juice from 1 slice of lemon 0.75 tbsp sesame seeds (in mix)

ground corriander, 1/2 tsp turmeric, 2 tsp cumin, 2 tsp garam masala, a few dashes of cayenne pepper
b. Legume Salad (Kidney beans, Garbanzo beans, raw tomato / onion, mint and
corriander leaves) OR c. Whole grain Oatmeal OR
I've made it with a few variations - adding courgette (zucchini), leaving out the celery and sometimes I add
dried corriander or fresh (cilantro) or different sorts of beans - kidney beans tend to be more cheaply and readily available in the UK rather than the black type.
The first attempt was rather bland, but with some modifications -
adding corriander, mushrooms and an onion - it became more flavoursome.
In the past I roasted chickpeas to top a soup, those would totally work on this recipe too, but this time I have gone for a whole bunch of
fresh corriander, flaked almonds, a sprinkling of chilli flakes and a swirl of coconut milk.
Meanwhile, add the spinach,
corriander and lime to the rice — having already drained any excess water.
Spend the time to hand grind (mortar & pestle) an appropriate but not excessive amount of spice (e.g. cumin, fennel,
corriander, cardamom) and let the rubbed pork stand for a few hours.
You might find adding a little ground
corriander to the soup, paired with the flavoring of the greek tzatziki will really put this in a new orbit.
Sorry to say that carrots are not traditionally put into callaloo but pumpkin is... just a piece... and always at least one leaf of chadon bennie — a wild
corriander type that grows in wet grass in Trinidad and yes a couple leaves of corriander can be substituted.
Served with soured cream and
corriander and homemade toasted garlic ciabatta.
Very good, but I skipped
the corriander and didn't soak the walnuts (didn't have time).

Corriander Chutney Ingredients: Corriander / cilantro — 2 bunches (washed and chopped) Green chilli — 2 Tomato — 1 small Lemon — 1/2 lemon juice Salt — to taste (a little bit is good) Method: Take all the ingredients (besides lemon juice), and grind them in a chutney in a mixer / grinder.

With only a few minor changes (less seasoning as I didn't have any garam masala or
corriander, plus I added some frozen sweet corn) this recipe is totally a keeper for us.
Would also be great for making marinades, onions, chilli, garlic,
corriander and things like that
