We
love courgette fritters (there is actually a recipe for it in my book), and it's a great way to use up the abundance of courgettes around at the moment.
Having enjoyed the
spiced courgette fritters I made recently and with plenty more courgettes developing, I couldn't resist this chickpea pancake version when I spotted it in the February 2005 issue of Delicious.
My favourite Sunday breakfast at the moment (it changes frequently) would have to be the breakfast I cooked for Christmas Day (and blogged about)-- sweetcorn and
courgette fritters with poached eggs, avocado and a tangy tomato chutney — paired with coffee though, since champagne with breakfast is really only acceptable for celebrations, like Christmas Day!
