I'm not sure exactly how much 40g is but personally I don't advice listening to such
crazy strict rolls, if you're not eating processed food / dairy /
meat then it really doesn't matter and if they make you feel healthy and awesome then really don't worry
about measuring grams!
I, for example, am not too
crazy about seitan but I totally love tofu and find it makes a great «
meat» substitute when you prepare and season it just right.
I substituted enchilada sauce (we decided we weren't that
crazy about chunks of tomato), and added the sauce and cheese salsa (I used Pace Mexican Four Cheese) to the bean /
meat mix to simplify assembly.
