I started thinking the technique and minimal ingredients of a
traditional crazy cake are not conducive to an outstanding gluten free result.
Known by many names, the recipe was for a
classic crazy cake that uses no eggs, milk, or butter.
Any idea as to whether this recipe can be modified to be egg - free, as the
original crazy cakes were (looking for wheat, dairy and egg free recipes)?
The wheaty version
of crazy cakes look finely textured and somewhat moist and cohesive, despite having no eggs.
I simplified the recipe
for crazy cake (also known as wacky cake or Depression cake) to come up with fluffy, moist chocolate cake made with the fewest ingredients, simplest measurements, and easiest instructions.

the crazy cake today.
Or because it's naturally dairy free like
my crazy cake gluten free chocolate cake, made as it is with oil instead of butter.
I used that in
your crazy cake recipe and the result looked like cake but stuck to the roof of my mouth and was a bit grainy.
I then used 1.5 c of this mixture in
the crazy cake recipe and kept the rest of the recipe the same.
Most of the other recipes will be main courses, but I'm
a crazy cake lady and had to challenge myself to come up with a grilled dessert.
For the meantime, enjoy
this crazy cake and by the time I come back I hope to be invigorated and ready to jump back into the kitchen.
Its called «
crazy cake,» because no eggs are needed — you use the protein in the flour to basically bind the cupcakes.
