When I was first
coming up with this

came across a buckeye
recipe that included
cream cheese and graham cracker crumbs in addition the four ingredients I was familiar with.
I subtracted the blue
cheese and wing sauce for 1/2 can of
cream of chicken and follow the rest of the
recipe, it
came out really delicious!
So while these are by no means diet food, they are much lighter than most of the
recipes for creamy delicious enchiladas I've
come across, for example I cut 4 cups of
cheese and swapped full fat sour
cream for fat free greek yogurt.
This
recipe comes to just over 400 calories for a huge half a squash serving, or half that if you serve it as a side for 4 (using low fat
cream cheese and 1 % milk) assuming the whole squash is 6 - 7 cups of squash.
On the road to making healthy pumpkin muffins (
recipe coming soon), I found myself with 6 ounces of leftover
cream cheese and half a can of pumpkin purée that I couldn't very well let go to waste.
