We find that an electric
mixer works best, as it whips the most air into the thick coconut
cream that separates
from the liquid in the can.
While the cupcakes bake, separate the thick white
cream from the top of the coconut
cream cans and place in the bowl of a stand

Also, I'm
mixing some coconut oil and coconut
cream (the fat
