In fact, I don't really even like calling it a whipped
cream substitute because it's so unique and often better than whipped cream as a topping on certain things.
Not exact matches
I
substituted plain yogurt for the sour
cream because that was what was in my fridge and oregano for dill
because that was what was in my garden and it was still amazing.
I didn't have Greek yogurt so I
substituted sour
cream, and I used two eggs
because I was too lazy to separate out an egg yolk.
I usually
substitute half and half for the heavy
cream, though
because I usually already have it.
Finally a opportunity to use the Fleur de Sel de Guérande I got for christmas:) I

cream for some semi skimmed milk (

cream has a high fat content, I felt

cream with a plant - based milk like almond milk or rice milk wouldn't yield a «real ganche»; it would lack the creamy flavor.
I would not recommend
substituting the
cream for half & half or milk
because too much heat will cause your homemade cheese sauce to separate.
Although I frequent my favorite vegan restaurants in New York City including Candle 79 and Angelica Kitchen, I've never attempted to bring their recipe ideas home to play with
because many of them involve cashew
creams and other nut - based
substitutes for dairy which scream daunting to me.
