The beans are what I
call a «secret ingredient» because at the same time they thicken the
soup and make it incredibly
creamy when you blend everything together.
Creamy soups usually
call for heavy cream as an ingredient, but I used plain Greek yogurt in this
soup — I thought the tangy yogurt would give the
soup a nice flavor, and it really did!
Here is another
creamy soup but its
called a bisque.
Most broccoli
soups call for heavy cream, chicken stock and cheese to make them
creamy.
