They can't simply send a Word doc to a typesetter (or page compositor), they have to create XML files and have to either pay new employees to do this or job it out to another company, they need to invest in technology or pay new vendors to
create mobi, epub, and all sorts of different files used by different e-book sellers.

I create mobi files (Kindle ebooks) to upload to Amazon, so I thought I'd give you a glimpse into one of my favorite tools with a quick demonstration.
Keep in mind that there are hundreds of ways to
create mobi files that vary widely in results, and most work perfectly well, especially if you're creating an ebook file of a plain text — or nearly plain text — novel or story.
If you use Scrivener, you can
create a MOBI file (Amazon Kindle) or an EPUB file (iBooks and elsewhere), or just a simple PDF file.
Amazon's command - line tool for developers to
create MOBI files is called KindleGen, and it is also integrated into many eBook - making programs like Calibre.
You can
create MOBI files using the free Calibre (Mac or PC) or MobiPocket Creator (PC only) programs.
The KindleGen program from Amazon allows you to
create a MOBI / KF8 package from an EPUB package at the command line.
My process is similar to yours, but I don't tinker with the HTML and after
I create the mobi version with MobiPocket Creator I use Calibre to create the ePub version.
However, as a matter of our quality control and workflow
we create the mobi from the epub, therefore it is the same edition of the book, and we use the same ISBN.
I heard horror stories from aggregators which handed over the ePub files of their publishing houses and are now asking me (and my service, I don't mind) to
create MOBI files from scratch.

When I want to
create a mobi file that I can upload to Amazon, I prefer to use eCub or Jutoh, because you can use Amazon's kindlegen tool with them.
Why would I want to
create a MOBI file using Pressbooks if Amazon allows me to submit a Word file that Kindle will convert for me?
Being able to
