I
'm going to make this again with adjustments because this style of stewing beans topped with
toasted, herbed bread
crumbs is outstanding in theory.
By that I mean that this cake couldn't
be easier to put together, and the result
is a nice little lemony pound cake with a dense
crumb that takes well to
toasting, piling up with strawberries or peaches, or just eating as
is.
It
's soft, easy to slice with a lovely
crumb, and I
'm sure it
's going to
toast beautifully.
Or if you
're like me, you'll pour this Vegan Cheese Sauce over some fluffy quinoa, stir in some sautéed mushrooms and onions, and then top everything off with
toasted bread
crumbs.
I substituted
toasted walnuts for the bread
crumbs since I
'm not supposed to eat gluten.
The taste isn't noticeably almond - y, the bread has a nice chew and the
crumb is fine and dense, which makes for great
