I used an all - purpose gluten - free flour mix along with psyllium husk
as a
binder and the muffins came out lovely and soft with a nice springy
crumb and decent rise.
What always gets me is that veggie burgers almost always have some sort of grain (bread
crumbs, rice, white potato)
as a
binder, which I'm not really interested in.
For example, wheat gluten is a relatively expensive ingredient that acts
as a
binder in pet food products, much like the bread
crumbs in a meatloaf.
