in the kitchen making various versions of strawberry jam to swirl into various versions of fluffy meringue clouds only to be
crushed when the
cookies came out soft and sticky.

Arrange

in single layer on ungreased
cookie sheet.
You combine

cookies.

Crushed Amaretti
cookies are sometimes used as a layer
in the trifle, as well as for decorating the top.)
On a few of them, I added
crushed candy canes to the top center of the
cookie before putting them
in the oven.

Finely
crush all but 14
cookies in a food processor or place them
in a ziploc bag and
crush into a fine consistency.
Make the Crust:
In a medium sized bowl using a fork, stir together the
crushed cookies and the melted butter.
Arrange half of
crushed chocolate wafer
cookies in bottom of pie plate.
To the large bowl of remaining cheesecake filling, stir
in the
crushed chocolate creme - filled
cookies and mix until thoroughly combined.
Stir
in the
crushed cookies.
Add butter little by little to the
crushed cookies either directly to the food processor or
in a bowl.
Mix
in the
crushed cookies crumbs and pour mixture on top of the first chocolate layer.
You can also place the
cookies in a sealed plastic baggie and
crush them with a rolling pin.
I especially love this crust, the original recipe called for a package of
crushed gingersnap
cookies (made like a graham cracker crust) so I've just used all the gingersnap
cookie spices
in the almond flour crust... you could do that with any gluten or grain free crust recipe!
An optional dunk
in chocolate and
crushed candy canes makes these
cookies a decadent dessert!
It resulted
in flat, coffee - fudge centered
cookies, with a hint of
crushed walnut, perfect for coffee lovers and
cookie lovers alike.
Stir
in 1/2 of
crushed candy canes to melted chocolate, then spread out evenly on your foil - lined
cookie sheet.
