This dreamy vegan cheesecake is made with a spicy ginger snap
crust filled with a creamy

I had to make some substitutions based
on what I had
on hand: walnuts added to the
crust since I didn't have enough pecans, a yellow squash instead of zucchini, and almond butter instead of
cashew butter for the filling.
To assemble, spoon a layer of
cashew cream
on the
crust, spreading almost to the edge of the
crust.
Pour sauce over the pizza
crust and spread around, without going all the way to the end of the
crust (leave about an inch or so that has no
cashew cream
on it).
Depending
on your cupboard stores you can swankify it by using all raw ingredients e.g. grinding your own almonds for the
crust and using raw tahini or raw
cashew butter in it.
