Fresh cucumbers and a cheerful grape caterpillar are perfect at lunch — or use
the cucumber slices as «bread» for sandwiches our kids love.
For the kids (pictured right), I pile a few tenders on a plate and give them a small bowl of the piccata sauce for dipping (I'll often add a few
cucumber slices as a token vegetable).

I made a goal this month to eat more veggies, especially raw ones, so I've been taking a baggie of
sliced carrots, celery, and baby
cucumbers to dip in hummus (Oasis roasted garlic with hot sauce)
as a snack.
Maybe you would like it better
as a fresh
cucumber salad — make the dressing, let that sit for an hour or two to allow the flavors to meld, then top some
sliced cucumbers with it.
And you, being cool
as a freaking
cucumber, will act like it's any old vanilla cake.But then, you'll start to
slice the thing... What's that?!
Or serve
as a dip along side
cucumber slices, carrots sticks, bell pepper strips and crackers.
3) Make the salad: Combine diced
cucumber,
sliced tomatoes, chopped parsley, and crumble in
as much feta to your liking.

If none of that works (which is truly rare),
slice it up and soak it in salt and vinegar
as a last
cucumber rescue effort.
For the salad: 1 1/2 lbs zucchini 1 lb cherry or grape tomatoes,
sliced in half 1/2 lb
cucumber,
sliced into half moons (about 1 1/2 cups) 1/2 cup finely diced red onion 1/2 cup roasted, salted peanuts 1 cup fresh herbs, such
as: Thai basil, mint, cilantro (or a mix of all three), chopped
«Serve this cake
as a light supper alongside a makeshift salad of
sliced cucumber, dill, mint, a little sugar, cider vinegar and rapeseed oil.
After grilling them to get the insides really tender, he served the eggplant with a little yogurt spiked with salt and lemon zest,
as well
as a simple salad of
sliced cucumbers, cherry tomatoes, shallots and sesame seeds dressed in nothing more than red wine vinegar and salt.
I hope you find this quick Mexican melange
as addicting
as I did topped with a dollop of vegan sour cream and a
slice of marinated
cucumber.
Marinated artichoke hearts, other fresh vegetables like
sliced cucumbers or carrots, sundried tomatoes, roasted red peppers, cooked shrimp, marinated seafood salads, fig jam, and spiced nuts are a few of the foods which come to mind
as possible additions.
Drop in a few ice cubes, and garnish with
cucumber slices, lemon
slices, and basil
as desired.
We really love the thinly
sliced onions in this

as well, but if you're one of those folks who just doesn't like to eat raw onions you can certainly leave them out.
Enjoy this salad
as you would any tuna salad: on crackers; in a sandwich with toasted bread and some curly lettuce; stuffed inside a firm, ripe tomato
as we do «down South;»
as a lighter canape on
cucumber slices; or
as the ultimate indulgence: on fried green tomato
slices as in the photo!
Oh, and in case anyone doubts the effectiveness of having one's scale in the kitchen, I'll have you know that today I ate an entire
sliced cucumber with carrot - ginger dressing
as a snack instead of the mini Milky Way bars I originally went in there for.
The kids like to use it
as a dip for apple and
cucumber slices.
For the garnish: 1 tablespoon Spanish extra-virgin olive oil 1

I simply made a huge batch of the dressing ahead of time and loaded up the rolls with simple
sliced veggies I purchased at the store,
as long
as you have at least avocado, lettuce, and
cucumber, you are good to go.
To make the turkey (
as seen in the photos), cut 2
slices of
cucumbers and 2
slices of olives for the eyes.
Serve
as an appetizer with
sliced baguette or bruschetta;
as a sandwich spread with
sliced cucumber and / or radish.

Although Gena likes to apply a thick layer of some sort of spread — think hummus or cashew cheese — directly on the nori sheet, I start with the
sliced cucumbers as I prefer my nori to stay
as crisp
as possible * — the drier, the crisper — and find it most pleasing to bite into the crunchy layer of
cucumbers first.
Since my husband can't eat dairy he smothers them in lox (made of wild salmon, not farmed) and thin
slices of
cucumber,
as shown in the photo on the left.
Slice 6 Persian
cucumbers on a jaunty diagonal to use
as scoopers, throw those in a Ziplock, toss that in a fridge, and you're golden.
The pickling liquid here is traditionally used for pickling
sliced cucumber, carrots, and daikon, so feel free to try these vegetables

You can begin minced and chopped family foods and hard finger foods such

But you can get flavor in a less acidic form by adding a
slice of lemon or lime (or other fruits, vegetables or herbs, such

Serve
as a dip with crisp celery sticks,
cucumber slices, green and red pepper strips, mushroom caps, and cauliflower florets.
If you were to whip out a head of Boston or Bibb lettuce,
sliced avocado and a few vegetables like carrot or
cucumber this would be excellent
as dinner.
Keep the garlic toast for those that want it when you have spaghetti, but add some
sliced cucumbers and tomatoes
as a healthy side.
Raw
cucumber slices can be placed on the skin to reduce inflammation from causes such
as acne and sunburn.
