As I went through the recipe, I realized I had a lot of similar ingredients on hand, so I did a riff on the original recipe: chopped dates in place of currants,

as a side when we're having friends
and family over during the summer, but it's also a fantastic side dish or even lunch on those lazy summer Sundays.
I often make this

and enjoy it
as a lunch after church or
as a side dish to pair with something I've grilled or made in the crock pot for Sunday dinner.
Mix fresh greens with your favorite chopped veggies like red onion, carrots,

As I came up with the recipe

In this summer salad, I add spelt alongside a few favourites (
