This deconstructed take on a cheeseburger puts some of the season's best and most abundant produce in the spotlight with a simple, dilly tomato -
cuke salad.
I didn't have more than 2 of those small (each is half of a large collard leaf) wraps, 1/4 c of
cuke salad and an 1/8 c of mushrooms (just eye - balling the quantities).

Instead of just lettuce and cut up
cukes in my
salads I now add carrot and zucchini zoodles which adds even more fiber to my
salads.
It transforms mild - mannered tofu and

I make an Israeli
salad variation cutting the peppers and

cukes), plum tomatoes, jalpenos (optional, I prefer the tamed style as they are not as «hot» but add a bit of zing to the
salad), garlic & onion powders, and «good» Italian dressing.
