Fortunately, it is the methodical, scripted process that I need
right now — the swift leveling
of a
cup of flour, the tension
of stirring a thick
batter with a wooden spoon — and not the finished product.
Use 1/4
cup to pour the
right amount
of batter, a spatula rounds them out nicely.
1 1/4 sticks
of butter (10 tablespoons)(I use salted) 1 teaspoon freshly - ground cardamom seeds 3 eggs 3/4
cup sugar 1
cup flour Up to 1/2
cup cold water, or as needed to thin
batter to the
right consistency
Adding either
of these ingredients will give the cake added flavor and moisture so, if you like, add 1/2
cup (120 ml)
of either crushed pineapple or applesauce to the
batter,
right along with the oil and vanilla extract.
I also put a full sized oreo in the bottom
of the
cup cake before pouring on the
batter... Was a big hit with the kids... baked
right in and then mini oreos on the top.
After the dry ingredients are added in the next step, you can add up to an additional 1/4
cup of milk in order to get the
batter to the
right consistency if it seems thick.
Just mix 1
cup of your toppings
right in the
batter.
I added some dark chocolate chips and there was just the
right amount
of batter to make 24 Brownie Bites using a cookie scoop to drop into mini muffin
cups.
i love these but the cheese seams to disappear when its mixed into the
batter so next time i'm going to leave it out
of the
batter and after the muffin
cups are filled shove a nice cube
of cheese
right in the center to make a cheesy filling!
Later after making my homemade coconut milk, I added 1/4
cup pulverized «pulp» to the cake
batter and about 2TBS or 1/4
cup dried dark cherries, 1 min 25 secs — 1 1/2 mins

of time required for my microwave, loved this version!
* You can not let Coconut flour sit long, as soon as you mix this
batter, ensure you put it
right into the oven * If you want chocolate muffins, you can add between 1/4 - 1/2
cup of cocoa powder to your taste liking * You can store these in an airtight container for 3 days * You can substitute the butter with Coconut Oil but I haven't tested it and 8 tablespoons would probably be too oily.
I believe every Mum should have a good
cup cake recipe in their back pocket, growing up my sister and I would make cupcakes with our Mum and always would get to lick the
batter off the spoon (before we were told to not consume raw eggs) so I believe making
cup cakes with my daughter is a
right of passage!
Adding / reducing the sugar: 3/4
cups of sugar is just
right for us, for slightly sweeter muffins, use 1
cup of sugar in the
batter.
