To make the icing, start by adding roughly 1
cup of fresh
blueberries to a food processor and blend until completely
pureed, about 30 seconds.
I used just 1/2
cup cocoa powder, since that's all I had, replaced the erythritol with sucanat and the quinoa flour with spelt, subbed the
pureed blueberries with one
pureed and peeled apple, and stirred in about 3/4
cup of chocolate chips.
Transfer to a bowl and mix the remaining 1/2
cup of whole
blueberries into the
puree.
For Babies: Use 1
cup of your already made
blueberry puree OR Microwave the
blueberries just until the juices start to run, about 30 seconds.
