I love your blog... Loved this recipe since it included both quinoa and chia (my new two favorite healthy ingredients) I recently tried making these following your recipe exactly and mine didn't come out so
well... they looked great but the inside was doughy and I used
cupcake liners and they baked right onto the
liner so I could only eat about half of the muffin = / I will definitely try another of your recipes... but I am kind of disappointed.

Fill the
wells of a jumbo
cupcake pan with
liners.
I baked it in a round silicone pan that I have, not sure the exact size... and it actually came out
better than my
cupcakes, which kind of stuck to my pan because I don't have
cupcake liners (i thought the sillcone would be
good enough, and I greased with some butter...).
Gently scoop into a muffin tin which either has
cupcake liners or has been
well greased, filling each cup about 2/3 full.

We suggest using a silicone muffin tin and lightly greasing it for the
best results, however, the recipe also works perfectly in a normal muffin tin with paper
liners (they just make it easier to get the
cupcakes out in one piece!).
The
best way to fill the
cupcake liners is to put the batter in a zip - loc bag and squeeze it into mounds.
You could also poor into
cupcake liners and freeze as
well!
Line nine

These are rich and chewy, but they're also a bit delicate so be sure to use

good coat with cooking spray.
