These were FANTASTIC as «muffins», though we thought they seemed to be more of
a cupcake than a muffin.
I cooked a batch earlier this week and Husband raved about them, saying they were DELICIOUS and more like
cupcakes than muffins (a big compliment, apparently).

I love scones so much (actually more
than muffins or
cupcakes) and these look so delish!
So rather
than do a four layer cake, I decided to bake one two - layered, 20 cm cake and 12
cupcakes using a
muffin tin.
Made this today as both a mini-
muffin and a regular sized
muffin /
cupcake rather
than a cake.
I was shooting for
muffin rather
than cupcake so only used 3 / 4c sugar, double vanilla, plus 1/2 cup walnuts in the batter.
For more of a mocha

cupcake, just omit the frosting and enjoy with your morning coffee.

muffin liners, which are bigger
than cupcake liners.

muffins are dense but not heavy, and slightly less airy
than a

It turns out creating the perfect
cupcake is way more complicated
than taking cake batter and plopping it into
muffin tins — here's how Saffitz did it.
* My little liners are for traditional faery cakes - much smaller
than a
cupcake or
muffin, but
cupcake tins seem to only come in big sizes now.
For me a
muffin is usually just a naked
cupcake, which is less
than, so in my food dictionary
muffin equals
cupcake with streusel.
I like to use squares of good natural parchment paper rather
than cupcake cases for
muffins (but if I do use cups I like these ones for being unbleached and eco friendly!).
I would want the baking cups, but I would choose the popsicle molds because my girls love homemade popsicles even more
than I love baking
muffins and
cupcakes!
Store - bought
muffins (even healthy - sounding versions like Starbucks Zucchini Walnut Muffin) can pack more fat and calories
than a
cupcake!
