I made these vegetarian, but you could easily add some cooked and crumbled bacon or sausage to the muffin
cups along with the veggies, if you so desire.

cups mixed chopped
veggies along with 1/4 tsp turmeric powder, 1/4 tsp red chili powder and a pinch of asafoetida.
Drain the
veggies saving the water (1 1/2
cups), add them to a blender
along with the saved water; blend on high until smooth and creamy.
Scoop a
cup of hot rice into each bowl you're using,
along with 1/3
cup green leafy
veggies, two hard boiled eggs (cut in half), kimchi, 1/4
cup sprouts, and 1/4
cup carrots.
Try a golf ball - sized portion of nuts or seeds

cup of raw
veggies (like sliced red bell pepper and cucumber) paired

In the Boost of Juice Challenge I challenged each child to create their own
cup of juice using 1 or 2 fruits and
veggies they knew they liked
along with 1 or 2 that they weren't so sure about.
To fill out the dish
with more
veggies, add 1/2
cup thinly sliced shiitake mushrooms
along with the onions and garlic, and 1/2
cup peas just after the carrots.
