I did make a few minor modifications though (Thai
curry paste instead of Indian and addition of kale).
Also I used
some curry paste instead of the powder and it didn't taste very good lol, so make sure to use quality dry spices when making your curry.
Modifications (because store didn't have everything) included shrimp in place of chicken, green
curry paste instead of yellow and butternut squash (bc it was precut and ready to go) in place of sweet potato.
You can use Thai yellow curry paste (such as this) instead of powder - just toss the shrimp in
the curry paste instead of the powder and then cook as the recipe describes.
I used green
curry paste instead of red but otherwise followed the recipe exactly.
