I love using
date puree in cookies and the salt on top is perfect.
Anyway, still great, I used walnuts instead of coconut and made my
own date puree.
Since my recipe
uses date puree (which may be purchased from a health food store) and almond meal it eliminates the need for a food processor.
To
make date puree, place 12 pitted Medjool dates in a small bowl and cover with water.
I added two grated carrots, plus a little ginger, cinnamon and cloves for that «carrot cakey» taste, plus used 1 tablespoon
of date puree instead of dates.
The one I use is from Tessemae's and it's totally natural, organic and sweetened with
date puree instead of refined sugar which is really cool.
In resonse to «substitution for bananas» — I think you could
mix date puree and applesauce and probably replicate the moistness that bananas provide.
Here I would order the Curried Kabocha squash soup with pumpkinseed gnocchi and
date puree for appetizer.

Love it, but how much do I use to replace the sugar in, say, a fruit cake ie is there a
majool date puree to sugar relationship.

The recipes use mostly honey, gluten free brown rice syrup, agave nectar and pure maple syrup as sweeteners, and
occasionally date puree, or blackstrap molasses.
Date puree is slightly thicker so I would use a little less but I imagine that it would taste delicious!

Place
the date puree in a large mixing bowl along with the mashed bananas, cashew butter, eggs, stevia, and vanilla and mix until smooth.
The tarts are filled with a little bit of pecan and covered in
the date puree!
All you need to do is mix
the date puree (from step # 1) 50/50 with plain yogurt, add an extra splash of vanilla, then serve it up with some fruit chunks.
Add
the date puree, coconut, and cashew meal in with dehydrated pineapple dices and blend well for 2 minutes by hand with a spatula until well incorporated.

We've changed this version up just slightly by using
a date puree to sweeten them instead of maple syrup.

a date puree, you're in for a treat.
