I baked this cake for my birthday just the other day (the 12th!)

If you absolutely need to make ahead, bake the cakes earlier in the day, cool and cover.

They not only release moisture during baking but their moisture makes the cake stay fresh for days after the cake is baked (that if the cake lasts that long!)

Perfect for spring but also for Mother's Day are Baking With Granny's Spring Fairy Cakes.

Anyhow, she would bake the rum cake in this vintage bundt pan that I still have and use to this very day.

The problem with bundt cakes, as much as I love them, is that they take forever and a day to bake and you always have that anxiety if the cake will come out cleanly from the pan or not.

In fact, my family devoured this coffee cake right away — two days after baking, to be exact!

I love this cake's delicate almond flavor and you don't have to wait weeks to enjoy this tea bread, as it can be eaten the same day it's baked.
