After ten
days of living
with my family, seeing my closest friends, and finding
comfort in the city I know so well it seemed counterintuitive to fly away to this other place I now called «home.»
Sure you could add a side salad into the mix or even pair it
with a perfectly grilled steak, but what I want on the first
day of a busy week is something that's both easy and
comforting.
There's nothing more
comforting and heartwarming on a crazy cold
day than braised short ribs
with roasted veggies and mashed potatoes.
We all have those
days during the week occasionally, and something that gives me
comfort is knowing that I can come home, hang out
with Thomas, break open a bottle of wine, relax a little, and make a good meal together.
Pair it
with your favorite whole wheat spaghetti, zucchini noodles or penne pasta for a
comforting meal at the end of a long
day.
And, to be honest, starting my
day with a few big mugs of it is my idea of
comfort.
