de Boeuf (beef heart) are indeed heart shaped, smooth and as krysalia mentions they are all meat and no jelly / pulp.
the fact is, they are truly beautiful, and I strongly prefer la coeur
de boeuf in pictures than in my salad plate if I'm given the choice of the variety.
