Nilla: There are a number of German and Scandinavian breads that are
dense and made with a
batter, more
than a dough.
When I made this recipe I used desiccated coconut, so since coconut flour is a lot
denser and absorbs much more water
than desiccated coconut, I suggest you use 1/3 to 1/2 cup of coconut flour, depending on the consistency of the
batter.

than a
batter, and the loaf was
dense and hard.
The difference in baking time will probably be about 10 minutes — a 9 inch pan requires less baking time
than an 8 inch pan due to the density of the
batter — the
batter will be more
dense in an 8 inch pan and therefore requires more baking time.
This treat is heavy on apples and light on
batter, so it's more like a thin German pancake
than a
dense cake.
