I like to garnish mine with a freshly
diced roma tomato and some plain greek yogurt.
For some zest and more chunks add the juice of a lime and
a diced roma tomato.
I also found using freshly
diced romas instead of the canned tomatoes adds some lightness to it that's very yummy!
