• Stir - fry 1/2 cup pre-cooked brown rice with 2 teaspoons peanut oil, 1 clove minced garlic, 1 teaspoon minced fresh ginger, 2 teaspoons low - sodium soy sauce, 1/2 cup diced red bell pepper, 1/2 cup green peas, and 1/2
cup diced tofu OR 2 oz peeled shrimp.
Try adding a bit
of diced tofu or seitan for an extra protein boost.
And for a vegetarian twist, you can
marinate diced tofu in lime juice or add chopped red and green peppers.
This version of fried rice includes a scrambled egg for protein, but you could swap it out for 1/4 cup of
finely diced tofu.
Other toppings 1/3 cup roasted peanuts 100g noodles (I would use rice noodles) 1/2
cup diced tofu 2 tablespoons browned onions 1 tablespoons finely chopped fried or sautéed garlic 1 teaspoon red chilli flakes few fresh coriander springs for garnishing
Any plant protein can be used in place of the beans —
diced tofu / tempeh, lentils or any other legume of choice.
Add the chickpeas or
diced tofu, then season with salt and pepper.
Dice the tofu into 1 - inch cubes.
Add
the diced tofu and cook over medium - high heat, stirring frequently, until the pieces are lightly golden on most sides.
-1 part arugula to 1 part romaine lettuce -3-4 sliced strawberries - Crumbled feta or goat cheese, or
diced tofu - Fresh ground pepper, to taste - Pomegranate dressing, to taste
So trim the asparagus and chop into bite - sized pieces, chop the green onions, and
dice the tofu.
