Often I'll substitute ingredients based on what we have in our pantry (i.e. ground turkey instead of beef,
diced tomatoes instead of stewed), but you get the idea.
If you're concerned about any amount of heat for kids you can always reduce the amount of chili powder and use plain
diced tomatoes instead of the tomatoes with the diced green chiles.
