I like to mix the black beans, corn and
diced tomatoes together first, then into my bowl.

together, after about 5 minutes add a 1/4 cup of white wine, mix it all
together and lower the fire to a LOW heat
Coarsely chop the eggplant, and toss
together with the herbs and
diced tomato.
Finely mince 1 clove of garlic, finely
dice 1/2 onion, finely
dice 5 sundried
tomatoes and add to the bowl, then add 1/2 teaspoon of dried oregano, 1/2 teaspoon of dried thyme and mix everything
together until well mixed
Stir
together sausage,
diced tomato and green chiles, reserved liquid, and cream cheese.

diced tomatoes, chili powder, salt, and remaining 1 teaspoon of cumin and 1/4 teaspoon of cayenne to the meat mixture and stir
together until well combined.
