We do add sausage, just a smoked sausage cut into half slices, to give it some meat.

Don't get me wrong — I definitely think you could
add sausage to this stuffing and it would be outstanding.

I put a half English muffin into a personal size aluminium pie plate, crack an egg onto it, fresh ground pepper, a few sprinkles of whatever cheese (cheddar, mozarella, provolone),

I made the recipe as given, but next time I might
do the suggestion of
adding more bechamel since veggie
sausages don't provide any of their own juices and are sometimes kinda dry.

Took your suggestion and
added sautéed mushrooms to the mix, even though I
did use
sausage, because, you know, ** shrooms **, and because their presence ups the Probable Child Satisfaction quotient.
* I didn't have spicy
sausage so I just used sage flavored
sausage and made it spicy by
adding a little black pepper, dash of cayenne, and some fennel seed for flavor.
This version had dairy but you can make it dairy free too or even
add in some
sausage if you don't want it to be vegetarian.
A typical full day of eating for me looks like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade

do something different with her.
I love it too, but don't love that many store - bought breakfast
sausages have nitrates or nitrites and other preservatives and flavors
