If you've never made
slow -
roasted tomatoes before, prepare to have your mind blown because they've got very little to
do with the aforementioned packaged variety in all of the best ways: they're so flavorful that you might think you think someone snuck into your oven and doused them in both vinegar and salt, even if you
did neither.
I've been
slow roasting tomatoes forever but never even thought of cranking up the oven to
do it faster!
Had the time so followed the
slow -
roast advice for the
tomato / onion / garlic mix, but
did them at 300 for 1 hr to speed things up.
- If you don't want to
slow roast some
tomatoes for this recipe, I'd recommend replacing them with a 1/4 cup of finely chopped sun - dried
tomatoes packed in oil.
You can easily use sun - dried
tomatoes for this recipe instead but I
do love the taste of a
slow roasted tomato.
