I think I've made close to 10
different recipes in the last 6 months hoping to find the right balance of feeling like I'm eating
cake for breakfast,
without actually eating
cake for breakfast.
The
cake, by itself
without icing, does have a
different texture (what you describe as rubbery / spongy) than a normal
cake with eggs, oil, butter, etc. more so if it is not cooked all the way through.
